The Sweet and Savory of Yummy…

Well, because I usually post at the end of the week, I get to see most of the other blog-a-thon posts before mine goes up. This week has been a delightful look at all the different kinds of goodies folks like to serve at Tea Time. 
Whenever  I can, I like to bake and serve home-made treats for my friends and family to enjoy with their tea. My favorite recipe is for these scones, shared with me by my friend Donna years ago. She got it at a Bed-n-Breakfast she had visited.

 

 

Fox and Goose Scones

3 cups flour                              2 ½ tsp baking powder

1/3 cup sugar                          ½ tsp baking soda

¾ tsp salt                                   ½ tsp cream of tartar        ¾ cup butter (not softened)

1 cup dried cranberries           1 cup milk              1 Tbsp heavy cream

 

Heat oven to 425. Grease cookie sheet.  Sift dry ingred. Together. Cut in butter until crumbly. Mix in fruit. Add milk and cream and mix thoroughly. Turn onto floured board and knead about 8 times. Roll out, (or pat into round) and cut into circles or triangles. Place on cookie sheet, brush with beaten egg (optional). Bake 12 minutes, or until golden brown.

You can substitute sour cream, mayonnaise, or yogurt for heavy cream. Substitute raisons or other dried fruit for the cranberries.

I usually use ½ cup milk + ½ cup half-and-half for the liquid. I love these with dried blueberries!

 
With my scones, I may serve any or all or the following spreads

If time or “life” will not allow baking from scratch, I have been known to take a short-cut and use various boxed scone mixes. I like to keep some of these on hand to use in gift baskets, as well.

During the Knit One, Tea Two swap, I learned about King Arthur baking mixes, which are really quite good. They have a nice variety, including some whole-grain and organic mixes.

Now, I’m off to enjoy my Tea corner for a quiet evening cuppa.
